Our next interpretation of a post-modern West Coast Style IPA. We took our West Coast malt base and switched the hop varieties. Kettle- & dry-hopped with an unreasonable amount of El Dorado Cryo, mighty Talus T90 and backed up by very fresh german grown Hallertauer Chinook Nectar. And this time we fermented this clean, crisp & bitter-slapping runner with a traditional west coast yeast only to let the unique hop combo shine!

Sweet Memories is a brand new Double IPA brewed with an almost classic base of Pilsner malt, wheat and oats, then double dry hopped with a no-brainer hop combo of Citra Lupomax, Strata T90, Mosaic Lupomax and for the first time: Mosaic Spectrum, a full flavor liquid hop product. So three different hop products have refined this droplet. New and refreshing impressions of tropical fruit salad, berries, apricots, rounded by a pleasant dankness and smooth mouthfeel.

Yes, trust your eyes, you see right. After more than 2 years of Schwarze Rose, we finally release our first bottom fermented beer. But it probably wouldn’t be us if we didn’t throw in a little twist. Contrary to the norm of German lagers, we brewed Echoes with a dash of oat malt to add some smoothness to this crisp brew. Dry hopped with Hallertau grown Amarillo only, you can look forward to a crushable Lager with notes of orange, hay, honey and fresh cut grass.

We had the wonderful opportunity to combine some ingredients in this beer, which we are very excited about and haven’t worked with yet. We brewed this beer on a English malt base of wonderful silky Golden Promise Malt, Oats, Wheat and Golden Naked Oats. As if that wouldn’t give the beer enough smoothness, we saturated this fine brew with Bru-1, Ekuanot Cryo and brand new Citra Lupomax hops in our multi-stage dry-hopping. So look forward to sweet complex notes of pineapple, melon, guava, lime & papaya in a New England Style IPA.

We started as homebrewers and that’s why teamed up with Friedie & Dave from the German homebrew Podcast Just brew it to brew this banger. And luckily Bindewald Malts joined in and provided us with their fine malts for this – lets call it – Triple Collab! We decided to use 50% wheat in the grist and a blend of a juicy British ale yeast and a classic German Hefeweizen yeast strain. Uniting these two worlds of a German Weizenbock and a New England DIPA, we double-dry-hopped this with a unique experimental hop combo of HBC630 and Australian Topaz.

Two of our bunch of Simons once played in a band called this glorious name. And now it’s also this: a fantastic juicy showcase of one our favorite hops: Simcoe! We backed up this lovely hop with the new Yakima Chief Hops Cryo Pop Blend, known for maximizing most impactful hop compounds and amplify other existing hops. And to this great blend as a base, we’ve added a hefty dose of fresh Simcoe Cryo and Simcoe T-90 in a multi-stage dry-hopping. Boom! Get ready for a pillowy tropical New England Style IPA.

Thats why he never stops talking about it since 2015 and it is also one of the reasons why we finally had to make a beer exclusively with hops from this magnificent southern hemisphere country. Brewed with a very similar but upscaled base like Sabotage, this beauty is dry hopped in multiple stages with Nelson Sauvin, Motueka, Rakau & Wai-Iti. Notes of gooseberry, lime, tropical stone fruits and an apricot finish.
